Blinis smoked salmon pepperoni and olives

Went to a friend home, she served this blini with canned tuna of different flavours, spring onions, avocado, cut red chili, and black sesame seeds as her entree. I asked her for recipe. She told me she bought blinis from Coles supermarket. I am glad to find ready bought blinis in Woolworth supermarket along with smoked salmon on sales.

Google: “A blini or, sometimes, blin, is a Russian pancake traditionally made from wheat or buckwheat flour and served with smetana, tvorog, butter, caviar and other garnishes. Blini are among the most popular and most-eaten dishes in Russia.”

This meal is for one and it’s simple, easy once you have eaten them at friend place. You will want to make your own creation. Blinis can be more like a entree, snack, light dinner or if you are having friends over, this can be creative entrees to serve them. Of course, you can make your own blinis. I enjoyed it and am licking my fingers. The remaining blinis, I cling wrap them and place in fridge for next time. Let’s create your own fillings with bought blinis!!!!

Ingredients

Blinis

1 packet Ocean Blue Bilinis Mini 205g, bought

Garnish

100 g mascarpone
100 g smoked salmon slices
4 pepperoni slices
4 black olives
4 green olives
4 basil leaves
1 Tbs lemon juice
half stalk spring onion, thinly cut

Method

Using microwave to warmed up blinis as said by my friend. Place 8 blinis on a microwave-safe plate. Heat for 20-40 seconds on high. Check for even heating and adjust time if needed. 

To assemble

Combine mascarpone and 1 tbs of lemon juice in a bowl. Top each blini with some of the mascarpone mixture and cut spring onion. Then on four blinis, place smoked salmon, green olives, scatter some cut spring onion and each with a basil leaf on top of green olives.

The remaining blinis, place 4 slightly folded pepperoni, smoked salmon, and black olives and scatter the remaining cut spring onion. Serve immediately with a glass of chilled prosecco. Enjoy!!!

Note: You can use prosciutto, sun-dried tomatoes, gherkins, dill, caviar, grated lemon zest, or quail eggs. You can use cream cheese instead of mascarpone. Anything you like be courage and try your own garnish. You could just spoon 2 Tsp batter directly on pan like many recipes do them.
