Green beans eggs onions

Bought green beans, eggs and onions. Then forgot to buy minced pork. Getting old forgot this and that. So, today simple meal to go with rice.

Glad my three ingredients are healthy ingredients, though I didn’t have minced pork. I serve it with rice and leftover can have it with noodles. It’s comforting and delicious. Let’s cook!!!

Ingredients

8 green beans, remove ends and cut to bite size
2 eggs
1 small onion, sliced
1 Tbs minced garlic
oil
salt
pepper

Method

Heat 2Tbs oil in a saucepan over medium heat. Add minced garlic and onions and cook until softened, about 3-4 minutes. Now green beans and cook for another 8-10 minutes until tender and slightly blistered.

Crack the eggs into a bowl and beat lightly. Next season with salt and pepper. Reduce heat to low, add eggs to the green beans, and scramble for 1-2 minutes until cooked. Spoon to serving plate. Serve immediately with rice and a glass of white wine. Enjoy!!!

Note: You can add fresh herbs like dill or red pepper flakes. For other variations: Add 1 Tbs Shao Xing Chinese Cooking Wine and 1-2 Tsp mirin sauce, or 1 Tbs soy sauce. You can add minced pork; cook minced pork until browned about 6-8 minutes. Then add green beans and cook further until tender.
