
I have leftover Carrot and daikon chicken soup, and found Chinese sausage. Decided to add to the soup. Bought broccolini and onion, so, I decided to cook the onion with my leftover eggs.

Today, I am making leftover soup with a twist. I love to create, explore and enjoy colourful meals and soups. I am glad to get green vegetables and finished off the eggs with onion. My dinner is flavourful, colourful, comforting and delicious. Serve my soup, broccolini fried egg with rice. Let’s cook!!!
Ingredients
Carrot and daikon chicken soup
12 drumsticks
enough water to cover
1 fairly big daikon, peeled cut into big chunks
3 medium carrots peeled and cut into large chunks
1 Chinese sausage, sliced
2 dried squid
4 cloves garlic cloves don’t peel whole
3 slices ginger
1 L chicken stock
salt
peppercorn
Broccolini
2 bunch of broccolini, cut to bite size, and trim 1/2-inch off stems
1 Tbs minced garlic
oil
salt
pepper
water
Fried egg with onion
3 eggs, lightly beaten
1/2 onion, sliced
oil
salt
pepper
Method
Cook the soup first
Blanch drumsticks in a pot of boiling water for 3 minutes. Rinse with cold water and set aside. In the big pot, add garlic, ginger, dried squid, salt, peppercorn, drumsticks and enough water. Cover and cook on medium heat about 30-40 minutes.
When drumsticks are cooked remove from pot, turn down heat to low, uncover and leave for 10 minutes. Meantime removes the chicken meat from bone by cutting into bite size pieces.
Add in carrots and daikon pieces along with chicken stock in. Bring to simmer, cook the carrots, Chinese sausage and daikon till tender about 15-20 minutes. Check seasoning and carefully add back chicken pieces, warm up again for about 5 minutes. Stir to mix well. Switch off heat.
Cook broccolini
In a saucepan on medium heat , add 1 Tbs oil and swirl around for 30 seconds. Then add in garlic minced cook for 30 seconds. Next add in broccolini, toss around, cook until it is bright green and some of the stems and tips of the florets are lightly charred, 5 to 7 minutes. Season with salt and pepper. Add some water, cover, and cook until broccolini is vibrant green and crisp-tender, 1 to 2 minutes. Transfer to a plate and set aside.
Cook egg with onion
Using the same saucepan, add 1 Tbs oil on medium heat. Swirl oil around for 20 seconds. Then add in sliced onion, toss around for 1 minutes. Then pour the lightly beaten eggs and cook for 4-5 minutes and harden. Flip over once it set. Removed to a plate.
In a deep bowl, fill with cooked rice followed by soup and some broccolini. Then place some fried egg on top. Enjoy with a glass of white wine!!!
