Shin ram yun noodles soup with kin to pai kuat

Got takeaway kin to pai kuat from my dinner with family at a Chinese restaurant we love yesterday. I got leftover sliced mushrooms. Going to have them with my favorite shin ram yun noodles.

“”Pai kuat” refers to various Chinese and Southeast Asian pork dishes, notably Peking pork ribs, which are deep-fried and coated in a sweet and sour sauce. The dish is characterized by its sweet, tangy, and savoury flavours, with a crispy exterior and tender meat. Pork is a high-quality protein source vital for muscle mass, containing phosphorus for bone health, as well as zinc, vitamins B6, and B12 for immune function. Additionally, fatty cuts of pork provide Vitamin K2 beneficial for bones and heart health.”

“Sliced mushrooms are fresh, thinly cut mushrooms that save preparation time and are versatile for various dishes. Available in grocery stores or whole to slice at home, they are rich in potassium and B vitamins that support energy production and heart health. Mushrooms also provide antioxidants like selenium, contain chitin for gut health, and can produce vitamin D with UV exposure. This is a simple leftovers of takeaway and it’s easy to add into shin ram yun noodles. For some colour, I have added my bountiful homegrown spring onion. My meal is hassle free, less utensil, comforting, and delicious. Let’s cook!!!

Ingredients

1 packet shin ram yun noodles
3 kin to pai kuat
1 atalk spring onion, cut to bite size
sliced mushrooms
water

Method

Bring out kin to pai kuat from fridge to room temperature about 35 minutes. Put kettle on. Empty shin ram yun and condiments into bowl. Place bowl on top of a plate for easy to carry out of microwave. Once boil, pour the hot water into the prepared bowl.

Next, add kin to pai kuat and sliced mushrooms to the prepared bowl. Give it a couple of stirs. Put it into the microwave. Microwave for 5-7 minutes until noodles are softened and cooked; kin to pai kuat are warmed up.

Carefully bring out of microwave, scatter some spring onions over the top. Enjoy!!!
