
Bought diced chicken on sale and had leftover green peas. Remembered that I had cooked chicken and peas last year. I decided to cook it again, but this time, I am adding onion for some hints of spice. I also changed the ingredients for the sauce. The diced chicken is not marinated in any sauces.

Recreated my last post of Bee hoon chicken pea and mushroom soup; this time no bee hoon, just chicken, peas, and onion. Glad to have changed the sauce ingredients, and adding onion makes it a comforting, healthy dish with a hint of spice and deliciousness. Let’s make a new sauce!!!
Ingredients
Chicken pea onion
350 g diced chicken
200 green peas
1 white onion, cut into slices
1 Tbs minced garlic
1 Tbs mirin
1 Tbs sake cooking wine
1 Tbs Shao Xing Chinese cooking wine
1/2 Tsp teriyaki sauce
salt
pepper
oil
Method
Wash diced chicken and dry on a paper towel. Season with salt and pepper. Heat 3 Tbs of oil in the saucepan on medium heat. Once the oil is hot, add garlic and onion; cook for 1 minute until fragrant. Add diced chicken in a single layer. Need to do in batches. Don’t overcrowd.
Stir the chicken occasionally to ensure it cooks evenly; cook for 5-7 minutes. Spoon out the cooked diced chicken onto a plate. Do the second batch in a single layer. Repeat stir the chicken occasionally to ensure it cooks evenly; cook for 5-7 minutes. Add back the first batch of cooked diced chicken into the saucepan.
Then add green peas, mirin, sake, teriyaki sauces, and Shao Xing Chinese cooking wine; cook for about 2 minutes. The chicken is done when it is opaque throughout. Check the seasoning. I added an extra pinch of salt and a couples more dashes of pepper. Spoon onto a serving plate. Serve with rice and beer!!!
