
Found my sliced mushrooms is not going to be fresh next day. I decided to use it with my leftover chicken pea; recipe below and adding it to the packet bee hoon my father bought for me.

Ingredients
Chicken pea
250 g diced chicken
150 green peas
1 Tbs minced garlic
1 Tbs light soy sauce
1 Tbs Shao Xing Chinese cooking wine
1/4 Tsp oyster sauce
salt
pepper
oil
Bee hoon and mushrooms
1 packet bee hoon tom yum flavour
60 g sliced mushrooms
hot water
Method
Chicken pea
Wash diced chicken and dry on paper towel. Season with salt and pepper. Heat 2 Tbs oil in the saucepan on medium heat. Once the oil is hot, add garlic, cook for 30 seconds until fragrant. Add diced chicken in a single layer. Stir the chicken occasionally to ensure it cooks evenly; cook for 5-7 minutes. Then add green peas, light soy sauce, oyster sauce, and Shao Xing Chinese cooking wine; cook for about 2 minutes. The chicken is done when it is opaque throughout. Spoon onto a serving plate.
Bee hoon and mushrooms
Place hot boiling water into a pot. Bring it to simmer; open the packet of bee hoon and condiments. Add bee hoon and condiments into the pot cook for 4-5 minutes until bee hoon softened. Then add mushrooms in, stir to mix well and cook for 1-2 minutes. Ladle the noodles and mushrooms onto bowls and add in cooked chicken and peas. Enjoy with a cup of tea!!!
