Crumbled salmon in apple and mushroom sauce with salad

I have not had salmon for ages. Thought I should eat salmon as it’s healthy. Even though it’s not on sale I bought it. I also have apples from my sister that have been sitting in my fruit bowl for more than 10 days, if I don’t use it, it will be rotten.

In my fridge my mushrooms too have been left for too long, it will be rotten if I don’t use it. Also got salad which it’s still good. Now I can create a complete healthy meal and not to feel stressed, that the salmon price is over my budget. Since my success in making crumbled tofu. I decided to try it on my salmon.

First, I steam the salmon fillets then coat it with flour, cornflour and experiment using semolina flour. For flavour added these powders: garlic, ginger, chili, nutmeg, and marjoram. Season with salt and black pepper.

Salmon is crispy, flavourful great combination of apple and mushroom sauce and colourful with salad. It sure paid off the price and indeed delicious comforting meal. Let’s cook!!!!

Ingredients

2 salmon filets
1 green apple
6 mushrooms
2 Tsp sugar
1 Tsp garlic powder
salad
molasses
oil
spray oil
butter
salt
black pepper

Crumbled flavoured coating

1/4 c plain flour
1/8 c corn flour
3 Tbs semolina flour
2 Tsp garlic powder
2 Tsp chili powder
1 Tsp ginger powder
1/2 Tsp nutmeg powder
1/4 Tsp marjoram
salt
black pepper
oil for frying

Method

Place fillets in a steamer basket lightly spray some oil and steam for 5 minutes using rice cooker with steam function. Remove fish set aside. Meantime, cut apple into half. Use half apple for juice: blend it in blender. The other half cut into bite size and add 2 Tsp sugar, stir to mix well. Set aside in fridge for 10 minutes.

Mix crumbled flavoured coating dry ingredients together. Add the fillet in and coat all around. Heat oil in pan, once hot add fillets in and cook until brown on all sides and crispy about 5-7 minutes. Remove drain in paper towel.

In another pan add oil and butter until heat up. Add garlic cook for 30 seconds. Add apple and mushrooms cook until softened and cooked through. Now add juice, molasses and 1 Tbs more butter until sauce is caramelised. Season with salt and black pepper.

Plate up with salad on the top, followed by salmon fillets and pour the apple mushroom sauce over salmon. Dinner is served with a glass of white wine.
