Tom yum zucchini mussels

Bought mussels from the mussel man when he returned from the sea. Glad to have some mussels on my fishing trip with my sister even though we didn’t catch any fish. On the way back we stop by at the grocery store, this zucchini caught my attention although its huge, I share half with my sister.

My sister bought a dozen eggs as she said she will just fry egg and eat with bread and her mussels. She gave me six eggs in exchange for half the huge zucchini. Felt like having spicy food, rummaged my fridge and found tom yum paste and chili shrimp paste, so I use it to curb my craving for spicy food.

It’s a luxury meal for me as I didn’t catch any fish but found mussels man and bought it. I was just going to cook it in white wine mussels but my craving for some spiciness in my taste bud had me change to using tom yum and chili shrimp pastes that will expire in 7 weeks’ time. Most mussels opened up only 4 didn’t. Glad to add zucchini with mussels they seem to pair extremely well, delicious, spiciness and comforting. Let’s cook and enjoy it with a cold beer!!!

Ingredients

1.2 kg mussels, debeard and wash clean
1/2 c zucchini, cut into bite size
2 Tsp garlic, minced
2 – 5 Tbs tom yum paste
2 Tbs chilli shrimp paste
2 Tbs olive oil
salt and white pepper
water for cooking mussels

Method


Bring to boil water and mussels in a large saucepan, do not crowd mussels for 5-7 minutes. Drain well and discard any mussels not open, they are dead. Set aside to cool a bit, then remove shell and keep warm with foil cover until ready to use.

Then in another wok on med high heat add oil; bring oil to some heat. Add garlic and tom yum paste, stir fry until fragrant about 3 minutes, then add in chilli shrimp paste for 2 minutes.

Next add zucchini, cook until tender and soft but not mushy for 5-10 minutes, stir once in a while to coat the tom yum paste and chilli shrimp paste. Next add the mussels into zucchini mixture and toss a bit for 2 minutes and let the mussels absorb into the tom yum and chilli shrimp paste. Serve with steam rice, fried eggs and a cold beer. Enjoy!!!
