Burnt chocolate and coffee cake

Felt like having chocolate and coffee cake. Got sour cream that is going to expire. Best use it. What to add sour cream to it? I only know to add into cake. Let see what it will taste like.

I am glad that it turned out well. However, it’s so dark looks like it’s burnt but it’s not because I use strong black coffee and a lot of cocoa powder. Perhaps too much sugar as chocolate and cocoa powder are bitter so I added a bit more sugar.

After the cake came out of the from oven my friend called saying I am coming over for tea. Make sure you have cake for me. I said I kind of having the feeling you are coming over and I know you love strong coffee. I have just finished baking burnt chocolate and coffee cake. We ate and its delicious and really enjoyed our tea break together. Let’s bake!!!!!


2 c castor sugar
1 3/4 c plain flour
3/4 c baking cocoa powder
2 1/2 Teaspoons baking soda
1 Teaspoon baking powder
1 Teaspoon salt
2 eggs
300 g sour cream
1 c strong black coffee (1 c of boiling water + 2 Tbs Moccona coffee)
1/2 cup vegetable oil
2 teaspoons vanilla extract


Heat oven to 180 degrees C. Grease and 23 cm round baking pan. Set aside. In the large or mixing bowl combine the sugar, flour, cocoa powder, baking soda, baking powder and salt. Mix with wooden spoon until dry ingredients are thoroughly combined.

Add eggs, sour cream, coffee, oil and vanilla. Beat on medium speed for about two minutes; the batter will be thin. Pour batter evenly into prepared pan. Bake in preheated oven for 55 to 75 minutes until skewer inserted in center comes out clean. Switch off oven but do not remove pan, leave in oven for 10 minutes with oven door close. After 10 minutes, remove from pans to wire racks. Cool completely. Serve with yoghurt or ice cream.
