
Valentine’s Day meal for One
I am celebrating it by pampering myself eating this comfort delicious meal with great love effort and driven inspired that I am loved by my family and friends who had have encouraged me to be confidence in my cooking.
I am indeed worthy of life and mastering home cook to plate up and sharing with love joy peace and my effort to publish it will be indulgent not only for Valentine’s Day but for any day and for everyone. It doesn’t need to have chocolates, flowers nor hearts decorations.
You can love yourself family and friends with your energy poured out from yourself – love, willingness efforts and attitude on how to treat others as you treat yourself. I am falling in love with my home cook meal for one.
Enjoy it with a glass of Cabernet Sauvignon red wine, TV and in PJ!!!
Ingredients
1 rump steak about 200 g
6 Tbs black peppercorns, cracked
1/4 punnet of red Perino tomatoes, cut lengthwise halves
1/4 punnet of gold Perino tomatoes, cut lengthwise halves
1 packet of exotic mushrooms
1/4 packet of rocket and spinach salad (bought)
2 – 4 of char grilled and marinated eggplants slices (bought)
1/4 lemon juice
2 Tsp chopped garlic
3 Tbs olives oil
spray olives oil
salt and pepper to taste
Method
Preheat oven 190 degrees C. Line the baking tray with foil and place the rump in it. Sprinkle salt generously over both sides of rump and let it come to room temperature, about 30 minutes. Rub the cracked black pepper all over both sides.
Then place rump tray in oven and roast for about 12-15 minutes or to your liking. Then place another tray of tomatoes which is spray with oil and season with salt and pepper into the oven. Halfway through roasting, turn rump over.
In a sauté pan add oil, and garlic; when garlic start to cook add mushrooms, cook for 2 minutes. Turn mushrooms over add the eggplants. When mushrooms and eggplants almost fully cooked about 4-5 minutes add lemon juice; season with salt and pepper. Remove from heat cover with foil and set aside.
Once steaks are done rested, plate them with salads on top. Then add the tomatoes, and eggplants. Next plate mushroom in a corner and on top of rump and remaining mushrooms on top of vegetables. Drizzle some oil and lemon juice over the vegetables and some over rump. Serve with a glass of Merlot red wine.
Note: oven temperature may vary. You might like your rump medium rare or med to done. You might want to garnish with sliced lemon or with your favourite sides.
