Blueberry chocolate and cinnamon cake

My cake doesn’t look presentable as I would love it to be for my nephew to have a birthday cake to eat, blow out the candle. However, I have to accept it as it is. Anyway, it was during the Covid time, thus he can’t blow the cake. He use a fan to fan out the candle.

Even though there are some crack in my cake, I manage to cover it with icing sugar, chocolate, and blueberries. I am glad it’s turn out moist, and delicious. For I bake this cake with love poured out to make a birthday cake with heart shape chocolates. I am glad that everyone love it. Let’s bake!!!!


250 g mascarpone
225 g plain flour
125 g blueberries
120 g light brown sugar
180 g dark chocolate
80 g white chocolate
4 eggs
1/2 lemon zest
60 ml orange juice
1 Tbs cinnamon powder
3 Tbs skim milk
3 Tbs raspberry sauce
4 Tsp baking powder
1 Tsp vanilla extract
a pinch of salt


80 g dark chocolate
3 Tsp olive oil
25 g blueberries
icing sugar


Preheat oven 180 degrees C. Grease and line 20 “square spring form pan. Beat eggs and sugar until pale and fluffy. Add mascarpone, mix until smooth. Then add zest, orange juice and vanilla. Continue to beat until combine. Sift flour, cinnamon, baking powder and salt and gently beat in until incorporated.

Add blueberries, white and dark chocolate and mix well. Spoon on to prepared baking pan. Smooth the top and give a gentle couple of knocks on the bench top. Bake 50 minutes or until skewer come out clean. Remove from oven. Let it cool in pan 20 minutes.

Gently release the side and let cake cool completely. Dust with icing sugar and garnish with blueberries and place 4 heart shapes chocolate in the centre surrounded by blueberries. Enjoy!!!!!

Note: Oven temperature may vary. You might need less or more time. You may use any fruits of your choice. You may omit icing sugar if you don’t want it to be too sweet. You can make frosting and cream your cake. You may also omit heart shapes chocolate or even add your own creation chocolates. You can use strawberries dunk in chocolate as decorations.
