
I got leftovers roasted chicken bought from Coles. As I didn’t want to waste food. I cut up the roasted chicken into pieces and create a new dish with penne pasta and vegetables.
It’s a simple quick and easy meal. You can roast your own chicken if you want. Then cut up into pieces, removed bones. The vegetables are leek and spring onion. This pasta is delicious, comfort and hearty meal for cold day as well as any day. Let’s cook!!!!
Ingredients
2 stalks spring onions, cut into bite size
1 pkt penne pasta, follow instruction to cook
1 roasted chicken, leftovers, cut up into bite size
1 Leek, washed and cut into bite size
1/2 c white wine, Sauvignon Blanc
1 c water from cooking pasta
1 Tbs lime juice
1-2 Tsp minced garlic
chili flakes
salt
pepper
oil
Method
Cook pasta according to the packet. Reserve a cup of the water. Drain pasta and set aside. Meantime heat a large pan with 3 Tbs oil. Add garlic cook about 1-2 minute until soften and fragrant. Add leek and stir fry until soften and cooked about 5-8 minutes. Then add spring onions, stir fry and mix around in leek for 1 minutes.
Now add pasta and toss around to mix well. Then add water and wine let it simmer about 5 minutes, mix well and reduce a bit. Season with salt and pepper.
Spoon pasta on to a serving bowl. Sprinkle chili flakes and drizzle some oil over. Serve it with Sauvignon Blanc.
Note: You can use any pasta of your choice. You can add carrots or any other vegetables as you like. You can roast your own chicken and cut up leaving bones and serve with pasta and vegetables. You can add lemon juice and cheese.
