Pumpkin chiffon cake with cream and tropical fruits

From my understand, before the wreath became an ornament with Christmas, it was a prominent emblem of victory and power in ancient Greece and Rome. Even to this very day Christmas wreath is symbolic of Christian immortality, as the circle and sphere both represent immortality. Christmas wreaths brought a new layer of meaning to the old idea.

It is also a representation of faith, as Christians would often place a candle on the wreath during Advent to symbolise the light that Jesus brought into the world. The Bible said, “Faith is confidence in what we hope for and assurance about what we do not see.” Well, in my mind, confidence and assurance is God Himself is the light; in Him there’s no darkness at all. So, too He will “rewards those who seek him with genuine heart and trust Him.”

We know that God is Faithful to keep His promises to all who come to Him through Jesus. Sometimes having Faith in “what we do not see” isn’t easy. However, we can rest in God’s goodness and His loving character, trusting that His wisdom is perfect in all things, even if it meant to wait.

A friend told me Jesus asked an interesting question about “Worry“: “Can any one of you worrying add a single hour to your life?” Well, human have tendency to worry, because it says that it doesn’t help the situation human are concerned about. One thing I know I can always turn my situation over to God in trust and faith. These Christmas, as we seek God, may He transform us and so impact our communities through us. Let celebrate Christmas with our mindset on Trust and Faith walking in the light and beauty of His Kingdom.

What would you have offered your community, let alone your country? I would offer Love, Peace and Joy through my creation of my cake. Where I pour my love into it; Joy as to share it with family and friends. Bring Peace through Faith and Trust in God who help me bake this cake.

The Wreath on the cake reminded each one of my family and friends including me. We are like the fruits decorated on top of the cream. We are of different characters, sizes, and have different skills but we are One Strong family surrounded by God’s Grace, Love, Peace and Joy. Human do make mistakes: fights and disagreed most of the time; forget the fights and forgive each other’s.

Life on earth is not bed of roses. There are always going to problems. For human ego is allowed in your mind, surely destroy relationships. This is not what God had in mind. He wants us all for Him. Living, and walking near Him through Jesus. We are His Children. While sharing our lives in this messy world way can be difficult, we should remember that the fruits of such generosity. As we generously share with one another, we can be confident that we will experience greater life still!!!

I urge you all to show Love and Compassion not just because it’s Christmas season but any day as long as you have breath. Can you do that? It’s needed no lesson; just focus on Jesus. He die for us because of the Love of God is free. This cake is moist and delicious. Merry Christmas!!!!

Ingredients

5 eggs, separate whites
1/4 Tsp cream of tart
90 g castor sugar
60 g pumpkin condensed soup
45 ml skim milk
70 ml vegetable oil, such as corn or canola
100 g cake flour, sifted (See Note)
Whipping cream
Tropical fruits

Method

Preheat oven to 170 C. Beat the egg whites until frosty, add cream of tart whisk until soft peaks forms. Add sugar and continue whisking until stiff peaks form. In another bowl, combine pumpkin condensed with milk. Add the egg yolks and oil. Mix till well blended and add the flour. Mix gently until no lumps.

Fold in approximately 1/3 of egg whites into pumpkin mixture. Add another 1/3 of the egg whites by gently folding into the batter. Add the remaining 1/3 egg whites and again fold into the cake batter. If too running add extra flour; consistence must be thickened.

Scoop the batter into prepared 10 inch tube pan, level the batter. Gently tap the pan against the counter to remove air bubbles trapped in the batter. Bake the 10 inch pan for 25 minutes. When skewer inserted comes out clean, turned the oven off; keep the cake inside the oven and leave the door ajar for 10 minutes.

Remove the cake from oven after 35 minutes and gently remove the cake from the pan. Let is cool completely before spraying the whipping cream and decorate with tropical fruits.

Note: 100 g plain flour, take 2 Tablespoon out replace with 2 Tablespoon corn starch plus extra if too running 3 Tbs plain flour plus 3 Tbs corn starch. You can use any fruits you like. You can use thickened cream and sugar to make the frost cream.
