Eggy garlic bread bake

I have leftover bought garlic bread and it’s been a few days old. Also, I have leftover thickened cream and finally I am able to use up my last three eggs before getting another dozen of eggs.

I love to experiment using different ingredients and method. This is similar to bread and butter pudding method. Be creative as well with decoration or use different baking dish. I am using my previously bought baking dish which contained paella rice from Dubai. I am also a collector of perhaps hoarder for things that can be multi-purpose use.

This meal is for one. You can make bigger portion if for 4 to 6 people. My creative simple ingredients hot meal is delicious and comforting for a cool stormy day. Let’s bake!!!

Ingredients

4-6 garlic bread sliced, bought
a handful of Mozzarella Parmesan cheese, grated
50 ml thickened cream
3 large eggs
5 Tbs milk
½ tsp salt
½ tsp freshly ground pepper
butter for spreading

Method

Spread butter on one side of each slice of garlic bread as the butter is dry after a few days old, then cut into bite size or follow the cut. Scatter a handful of grated cheese at the bottom of dish. Arrange the slices of bread overlapping at an angle (like dominoes) with the crusts pointed upwards. The slices should be nice and snug and they don’t have to be perfectly arranged.

Place the cream, eggs, milk, salt and pepper in a bowl and whisk until well combined. Stir in half the remaining grated cheese, then pour over the top of the bread, lifting up some of the slices to let the egg mixture seep in.

Stand at room temperature for 15-20 minutes to allow the custard to seep into the bread. While the garlic bread is soaking, preheat the oven to 200 degrees C. Bake for 25-35 minutes, until golden and crispy. Set aside to cool slightly for this will make it easier to eat. You don’t have to cool slightly just eat straight away.

Note: If you are using fresh garlic bread or making your own garlic bread, you don’t have to spread another coat of butter. You can buy pane de casa bread, sliced them to your choice of thickness and rub garlic over it and drizzle some oil and put it on grill and then tear or cut into the shapes you want to put into baking dish.

You can make your own custard instead of using thickened cream. You can add fruits in instead of just plain garlic bread. You can use any bread of your choice. Double the portion if you are making a bigger portion.
