Strawberries croissant pudding

Watched Nigella Lawson cooking TV program years ago and have the craving for croissant pudding. Search for the recipe and as usual I change the ingredients so I can called it my own.

I always have the habit of buying fruits and cream and never use them straight away until they are going to expired than only, I panicked and dump everything together to make a dish or dessert with the ingredients that will expire in a few days.

I have strawberries that will expire in two days and double cream in a day. Then my croissant have expired 3 days. Also found some leftover ouzo. Might as well add it in rather than leaving it siting in the pantry. Glad that I can still use the stale croissants and turned it into pudding that for sure satisfied my stomach. Let’s cook!!!!

Ingredients

2 stale croissants
100 g sugar
2 Tbs water
125 ml double cream
125 ml skim milk
2 Tbs ouzo
2 large eggs (beaten)
125 g strawberries, sliced into bite size


Method

Preheat the oven to 180°C. Tear the croissants into pieces; strawberries cut up and put in a deep baking dish. Put the sugar and water into a saucepan, and swirl around to help dissolve the sugar before putting the saucepan on the hob over a medium to high heat.

Caramelize the sugar and water mixture by letting it bubble away, without stirring, until it all turns a bit thicker; this will take 3-5 minutes.

Turn heat down to low and add the cream, the milk and ouzo. Whisking away. Take off the heat and, still whisking, add the beaten eggs.

Pour the caramel ouzo custard over the croissants and leave to soak for 10 minutes if the croissants are very stale. Place in the oven for 20 minutes. Let it cool for 10 minutes before serving.
