Guess I am not really into healthy diet I use lot of sugar and honey. For a change and being a creative person, I decided to use pandan flavour essence as I see on google there are lots of variation of chia pudding most use saffron and vanilla. I have not come across any with pandan flavour. Guess it’s not a theme or ingredients use widely on pudding.
As I love to create and explore the various combo, I use thickened cream as it will expired in 5 days, instead of almond milk like most recipes I find on google. I love blueberries so I am adding it in and making a compote to go with. Instead, vanilla extract, I use lime juice. I added more sugar and honey to make my pudding sweeter.
My pandan chia pudding is delicious with blueberries compote and fresh blueberries. I think it looks beautiful in green too. Let’s cook!!!!!
Ingredients
300 ml thickened cream
1/4 c chia seeds
2 Tbs honey
4 Tbs castor sugar
1 Tsp lime juice
1 drop of pandan essence
Blueberry compote
80 g blueberries
4 Tbs sugar, plus extra
1 Tbs honey, plus extra
3 Tbs lemon juice
Method
Combine thickened cream, chia seeds, sugar, pandan, lime and honey in a mixing bowl. Mix well, then 10 minutes later mix well again. Place in bowl and in fridge overnight.
Make blueberry compote on the same day if you like, I make it so it can cool completely. Take 6 blueberries out set aside. The remaining put in a saucepan with sugar, honey and juice. Bring to a boil. Reduce the heat to low and simmer until blueberries are soft and starting to break and the sauce thickens, for about 5-7 minutes.
Taste, and add more sugar if needed. The compote will thicken a little after it has cool. However, if you think it’s too thin, add more sugar and honey. When you are happy with the consistency, remove from hob. Let it cool completely. Serve pandan chia pudding with 6 fresh blueberries and compote. Enjoy!!!!
