
Who say dinner for one is boring? I say, it can be exciting, romantic with your favourite music. You can make it enjoyable eating alone with your creative skill.
Adding thyme and peri sauce to boost more flavour as well as curb my hunger for chilli. If you cannot take chilli omit it. I am glad my experiment making thyme sauce turned out perfectly.
Charring potato and mushrooms, enticing the aroma of lightly char infused with olive oil. Boiling broccolini as added vegetables green colour and healthy. So, looking down on my dinner plate I see a delicious hearty and comfort meal that is satisfying for one. Enjoy with a glass of Pinot Noir!!!!!!
Ingredients
1 medium size rump steak
1 small potato
6 button mushrooms
1 bunch broccolini, cut to bite size
olive oil
salt
pepper
peri peri extra hot sauce, bought (Opt)
Thyme sauce
1 garlic clove
1/4 bunch fresh thyme, washed
1/8 bunch fresh flat-leaf parsley, washed
2 Tbs lemon juice, bottle bought
1 Tbs olive oil
2 Tsp grated fresh lemon zest
1/2 Tsp salt
1/4 Tsp black pepper
Method
Mince garlic and mash to a paste with salt using a knife. Transfer to a food processor add remaining ingredients and blend. Set aside in fridge. (See Note)
Boil potato in microwave for about 6-7 minutes. Remove from microwave, using the same water add broccolini microwave about 7 minutes; remove and drain well; cover plate with foil to keep warm.
Meanwhile preheat the grilling pan to hot. Drizzle some oil over the grilling pan; add potato and mushrooms. Season with salt and pepper. Gently stir to coat oil and lightly char them. Remove from pan and add into plate with broccolini. Brush steak lightly with oil. Season with salt and pepper. Then add steak into grilling pan.
Cook on one side until the first sign of moisture appears about 4 minutes. Turn steak once only. Test the steak for degree of doneness with finger or tong. Rare is soft, medium feels springy and well done is very firm.
Remove steaks from heat, loosely cover with foil and rest steaks for 5 minutes before serving. To serve, place the steak on plate, top steak with thyme and peri sauce (opt) followed by potato, mushrooms and broccolini. Serve with a glass of Pinot Noir.
Note: Thyme sauce can be done a few hours earlier and even a day in advance. You can grill steak to your choice of doneness. You may want to grill your steak, potato and mushroom on BBQ grill. I don’t have BBQ set. I only have a grilling pan. You may add any sauce to your liking. You may use tomato or mayonnaise or even lemon thyme butter sauce.
