Honey treacle cake

Google: “Treacle similar to pure molasses. Treacle contains vital vitamins and minerals; also, both calcium and magnesium”. I have recreated this cake from Nigella Lawson, a food blogger and TV cook. I have added treacle and instead of plain flour, I have use bread flour and plain flour. Which I ran out plain flour.

The cake is moist, soft and delicious. It can be for afternoon tea at friend or even for your own family gathering. My family and I like plain cake. You can drizzle butterscotch sauce on top . Let’s start baking and fill the house with the aroma of honey treacle and spices!!!!!

Ingredients

150 g plain flour
400 g bread flour
3 Tsp baking powder
200 g soft light brown raw sugar
3 Tsp bicarbonate of soda
1/2 Tsp nutmeg
1 Tsp sumac
2 eggs
250 g unsalted butter
300 ml honey
4 dinner Tbs treacle
150 ml whole full cream milk
150 ml skim milk
a pinch of salt

Method

Preheat 17 degrees C. Grease and line 10″ square spring form cake tin. Mix flour, baking powder, bicarbonate of soda and mixed spice into a bowl. In another smaller bowl beat the eggs.

Melt butter, sugar and honey in a saucepan on a gentle heat, then add the milk and treacle. Stir to mix well. Let it cool for 10 minutes before adding flour mixture with the eggs.

Beat the mixture with a big balloon whisk until smooth. Then pour the batter into the prepared tin and bake for 1 hour 30 minutes. The cake will rise during cooking (but fall on cooling) though you want the middle to remain a bit sticky.

Once done, switch off oven, leave cake with door close in oven for 35 minutes. The remove to rack to cool further 10 minutes. Now remove the tin and turn over to plate. Serve it warm and with tea. Or even with ice cream.

Note: Oven temperature vary. You may need less or more time. You may use all plain flour. You may use golden syrup. Or you may want to have half and half honey and treacle. Golden syrup is “light treacle; is a thick amber-coloured form of inverted sugar syrup made in the process of refining sugar cane or sugar beet juice into sugar”. You can make butterscotch sauce to go with it. Or whipped up cream.
