Through a new lens

It must be amazing to look at a picture and see the individual houses instead of just a blur of grey! my optometrist said. I got my new glasses and am pleased that they changed the way I saw everything, making the blurry beautiful.

But noticing details can reveal the beauty in what might seem to be a black chicken burger piled on top of salad and vegetables on a white plate. As the saying “the more you practice the better it gets.” I made this from scratch. Instead of buying readymade burger and just cook it.

I choose to try make it on my own. I am glad that I still have food to eat even though its presentation is not pretty sight. As long as I have tried, I am satisfied. This burger is comfort meal and next time it will get better and beautifully serve. Let’s cook!!!!

Chicken burger Ingredients

750g chicken mince
1 medium grated brown onion
1 1/4 c fresh breadcrumbs
2 1/4 Tsp Worcestershire sauce
1- 1 1/2 Tbs tomato sauce
2 Tbs Oyster sauce
1 Tsp fish sauce
1 large (800g)egg
1 1/4 c grated cheese of your choice (I use Parmesan)
1/2 c parsley leaves, roughly chopped
salt
pepper
5-8 Tsp chilli flakes (Opt)

Vegetables Ingredients

1 medium sweet potato, parboil and cut into 3 equal size
3 small potatoes, parboil
9 stalks of kale tear the leaves, wash and drain dry
1 X 250 g packet of mixed salads
150 g tub bought sundried capsicum
salt
pepper
oil for drizzle
butter flavour oil spray
foil

Method

Preheat 200 degrees C. Par boil sweet potato and potatoes in microwave about 10-12 minutes. Meantime, combine mince, brown onion, breadcrumbs, grated cheese, tomato sauce, oyster sauce, Worcestershire sauce, fish oil, egg, parsley leaves, chilli flakes, salt and pepper in a bowl. Mix and form into 9 burgers. (Patties).

Then line flat baking tray with foil, and place kale leaves, season with salt and spray oil. In another tray lined foil, spray oil both side of burgers and lay burgers on the tray followed by potatoes, and sweet potato. Season potatoes, and sweet potato with salt, pepper and spray the butter flavour oil.

Place them in oven for 20–25 minutes. Remember to turn over burgers the other side after 10 minutes. Further cooked for 15 minutes. Remove the kale, potatoes and sweet potatoes once they are done and set aside. Now separate the salad; equal portion into 3 plates and drizzle a bit of oil over the salad. Once done remove burgers and set burger on top of the salad.

Then arrange the potato in the centre of burger and sweet potato on the left of burgers and place kale chips on the right side. Spoon a few strips of sundried capsicum over the burgers with the herbs oil from the capsicum. Serve with sweet white wine. such as Sweet Lips Moscato.

Note: Oven temperature and time vary. You may want to make burgers bigger so that means make 4. Thus, you may omit fish oil as it might be salty.  You can grill your burgers or pan fry it. Optional to use chilli flakes.
