Felt like having spaghetti. Got left overs Kale asparagus, carrot and potatoes that are going to rotten. So, I use them all to make vegetables spaghetti.
At least I got a decent meal full of vegetables. Let’s called it vegetarian meal. The vegetables spaghetti is comfort healthy delicious. I enjoyed it a glass of white wine. Let’s cook.
2 bunches asparagus, cut into bite size
2 cloves garlic, minced
1 small green capsicum, cut into bite size
4 small stalks of Tuscan Kale, cut into long thin strips
1 large carrot, cut into cubes
2 stalks of spring onion, cut thinly
2 small potatoes, parboiled and cut into cubes
200 g spaghetti, cooked according to instruction, drain and set aside
Cook the spaghetti as per instruction on packet. Then heat oil in frying pan, add garlic fry till fragrant. Next add asparagus, carrot and potatoes, fry for 5-7 minutes until slightly soft, add in kale and fry about 6 minutes until withered.
Then add spring onion, capsicum and season with salt and pepper to taste. Add the cooked spaghetti and stir to mix well with the vegetables. Serve with Parmesan cheese or on it on with a glass of sweet white wine.
