Apple berry oat yoghurt cake

Craving for cake today. Cake has always been my favourite desserts. I got an apple that are going soft and bruise, leftover strawberries and blueberries. Then in my pantry I discovered I have cake flour that will expired in 5 days times. Also, the rolled oats have been sitting there for ages. Best use before it expire.

I have not use my bundt pan for a while. It’s old and some of the lining had worn out. Therefore, I best greased it wit lots of butter and a layer of oil to help me remove my cooked cake when it had cool completely.

It’s a simple cake as I am trying out the combination of fruits and rolled oats. I know for a fact the oats can be roasted or baked in oven. This is my first time adding oats to cake. I suppose some new creation or decoration will be interesting to enjoy the cake in its creative fun, interesting, moist, healthy, delicious and certainly did curb my craving. It’s beautiful upside down with oats on the top. Let’s bake!!!

Ingredients

8 blueberries
6 strawberries, cut to bite size
3 large eggs
1 green apple, core remove, cut into cubes
500 g yoghurt
350 g cake flour
200 g castor sugar
125 ml oil
80 ml lemon juice (2 big or 3 small)
2 Tsp lemon zest
1 1 /2 Tsp baking powder
1/2 Tsp bicrab soda
1 Tsp salt
oil, grease bundt pan (OPT)
butter, grease bundt pan

Method

Preheat oven 175 degrees C. Grease the bundt pan with either oil or butter. I use oil as my bundt is old and the lining has worn out and to prevent.

In a deep metal bowl, mix together cake flour, baking powder, bicarb soda and salt. Set aside until needed. In a mixing bowl, beat together yoghurt, zest, lemon juice, castor sugar, oil and eggs until smooth and creamy about 5 minutes. Be careful not over mix.

Add dry ingredients to yoghurt mixture. Mix with a metal spoon or wooden spoon until combined. Fold in apple, and strawberries. Batter will be thicken a bit and creamy. Spoon onto prepared bundt pan, bake for 55 minutes. Halfway through cover with foil of use a big enough metal bowl to cover the bundt to ensure the top not over brown. When skewer inserted in and out clean then cake is done.

Switch off oven, remove the metal bowl, and leave cake in oven with door close for 1 hour. Then remove from oven onto rack to cool completely. When it had cool completely after 1 hour. Flip the bundt over onto plate and then flip back onto another plate. Let it cool further about 30 minutes before slicing and serving.

Note: You might need longer time in oven depending on type of oven say about 55-70 minutes. You can use any fruits of your choice. Or you can just use apples only or blueberries or strawberries. You can add poppy seeds or chocolate sprinkles.
