Found this photo again. I thought I have lost it I made it way back in 2014. Glad to be able to share it with you. I often wonder is baking healthier than pan fry. Google: “Baking may also be a better way to retain the vitamin D content of fish. One study found that baked salmon retained all its vitamin D, whereas fried salmon lost around 50% of this important vitamin ( 49 ). For these reasons, oven-baking is considered a healthy way to cook fish”.
What about grilled salmon? Google: “Grill cooking is considered healthful because it doesn’t require the addition of any extra fat, other than a little coating of oil on the grill itself. Salmon is perfect for the grill. It only takes about 10 to 15 minutes of total cooking time”.
I have added paprika to my salmon for extra flavour. You can marinade with anything of your choice. It’s always great to have salmon with salad and some carbohydrate potatoes and tomatoes not just for colouring my plate but healthy eating. My dinner is delicious comforting and enjoyable to eat. Let’s grill!!!!
4 salmon fillets
4 baby potatoes, parboil
1 packet salad mix
1 punnet medley tomatoes
Preheat oven to 230 degrees C. Thawed salmon to room temperature on a plate line with paper towel. Meantime, boil potatoes till slightly soft, drain and set aside in another pan with medley tomatoes. Drizzle with oil and season with salt and black pepper. Place in oven cook until soften about 8-10 minutes. Put salmon on lined foil tray. Drizzle oil, sprinkle salt, paprika and gives a few shakes of black pepper over the meat and skins. I would rub in the oil salt, paprika and black pepper. Place in oven and grill about 12-15 minutes until salmon is cooked through.
Wash and dry salad mix and divide evenly on plated. When potatoes and medley tomatoes are done place on top and around salad keep some to put on top of salmon. Once cook place salmon on top of salad and put each colour of tomatoes on top of it. Serve immediately with a glass of white wine. Enjoy!!!!
Note: The internal temperature of cooked salmon should be between 49- 63 degrees C. You don’t want too raw nor overcooked. Oven grill temperature may vary you might need more or less depending on how well you want it cook. I make sure it’s pink-orangy colour that would be medium to well done.
