I was clearing my pantry to check what I have and what to stock up. Making sure my stock is not expired and giving it a wipe clean with a disinfectant wipes. Found a bottle of black bean garlic sauce, which my mother bought for me. Thought I should use it before it expire. The only way I know how to add this sauce is in minced pork as my grandma did. As I have minced pork I might as well use it with this sauce. I added broccolini so that I can have some green.
Google: “The main flavour in black bean sauce comes from fermented black soybeans. These give it a somewhat funky note, but it’s reduced with other strong flavours. This sauce is spicy, sweet and salty. It usually has garlic, ginger, sugar, soy sauce and warming spices in it, all of which contribute to the vigorous flavour”.
My minced pork has a deep umami flavour, it’s salty and delicious. I really enjoyed it with noodles soup. You can have it with rice too and perhaps a vegetables on the side like my grandma use to serve. Let’s cook!!!!
500 g minced pork
2 bunches broccolini, cut into bite size
1 packet shin ram yun
1 Tbs minced garlic
hot boiling water
2 Tsp cornflour
1 1/2 Tsp light soy sauce
2 Tbs black bean garlic sauce
1 Tsp ginger powder
2 Tsp sesame oil
1 Tsp chicken stock powder
1 1/4 Tsp sugar
6 Tbs water
In a large bowl mix the marinade for pork until well combined. Add pork, tossing it in the marinade and make sure meat are covered. Let stand at room temperature for about 10-15 minutes.
Heat deep pan on medium high heat and add 1 Tbs oil. When the oil is hot, add garlic and fry until fragrant. Then add the marinated pork and let brown briefly. Then add broccolini cook about 4-6 minutes. Add pepper, toss to mix well until pork, and broccolini are cooked and soft. Now add in marinade sauce and check seasoning.
Transfer back to marinade bowl keep warm. Put kettle on. Open the shin ram yun packet, place uncooked noodles and the condiments in a bowl. Now pour hot boiling water over it. Microwave for about 6-7 minutes until softened. Remove from microwave and spoon about a ladle of cooked minced pork, broccolini with the marinade onto the cooked shin ram yun. Toss to mix well. Serve immediately with a glass of white wine. Enjoy!!!!!
Note: The black bean garlic sauce is salty. You might not need salt, if you want just a tiny pinch will do. You may omit light soy sauce. The remaining pork and broccolini can be stored in freezer for about 2 weeks. In fridge about 5 days. You can serve it with rice or noodles. You can add carrot in if you like to your defrosted and heated up pork and broccolini to make a new dish.
