Since my last recreated black rice pandan pudding with strawberries flower from Mayuri Patel. I have to admit that I love it. So, I am creating my own black rice pudding with my own twist, using sour cream, blueberry compote and papaya.
This pudding is creamy sweet with compote and fresh papaya is indeed my best creation. I love it so I am grateful that God had inspired me to produce this beautiful flavoured creation that I decided to share it with you all.
250 g black rice
3 c water
300 g sour cream
50 g sugar
Squirt of honey
1/8 Tsp sea salt
125 g blueberries, wash
4 Tbs sugar, extra if needed
3 Tbs lemon juice
Papaya or any fruits of your choice
Put water and black rice in pot over medium heat bring it to boil, keep stirring about 20 minutes. Once boiling, turn down the heat to a steady low simmer and add sour cream, and salt; cook about 45-55 mins uncovered, stirring about every 10 mins or so to prevent sticking or burning on the bottom. It will get totally thick & creamy.
Add sugar and honey, cook until dissolved and mix until well combined. When the rice is done, creamy, thickened and tender, take it off the heat and pour into a individual serving dishes and smooth the tops. Refrigerate for at least four hours to chill completely. Preferably overnight.
The next day make blueberry compote. Place the blueberries in a saucepan. Add the sugar and juice. Bring to a boil. Reduce heat to low and simmer until blueberries are all soft and just starting to soften and liquid thickens, about 5 to 10 minutes.
Check and taste, and add more sugar if necessary. The compote will thicken a little while it cools off, but if you think it’s too thin, mix 1 Tbs of water with 1 Tbs of cornstarch and add it to the saucepan. Stir well and remove from heat. Let the compote cool off completely. Pour in to a jar and can store in fridge for up to two weeks.
Before serving, cut some papaya and place it on the black rice pudding. Next spoon some blueberry compote over the black rice pudding and some on papaya. Enjoy!!!
Note: You can use normal rice or basmati. You can use coconut cream instead of sour cream. You can add vanilla or pandan or saffron. You can use any fruits of your choice.
