Black rice minced beef and vegetables shakshuka

Finally, I made shakshuka. Out there, there are many shakshuka on the website. I know shakshuka is poached eggs in tomato sauce and eaten with bread. It’s a Middle Eastern breakfast.

I trust it can be eaten anytime of the day. It can be shakshuka with spices and chilli. Anyway, I have made mine a little different from most recipes. I have added black rice, spices, herbs and chilli sauce together with can tomato. It’s not a lot of gravy where I and my family going to be dipping the bread in.

As the black rice is going to expired in 6 days, also minced beef is going to expired in 3 days. So, I added these and vegetables to make it our main meal today for 4 people. Let get Cooking!!!

Ingredients

250 g packet black rice (microwave method on packet)
500 g minced beef
1 can diced tomato about 410 g
1 – 1 1/2, can water from tomato can
1 medium eggplant, washed, and cubed
1 green capsicum, thinly sliced
6 -8 medley sweet baby capsicums, thinly sliced
1/2 red onion, thinly sliced
1 Tsp ginger, thinly sliced
3 small kaffir lime leaves, thinly sliced
4 eggs
5 oregano, thinly sliced
2-4 Tsp Sumac
3 Tsp garlic, chopped finely
1 Tbs Moroccan powder
1 Tbs cardamom powder
3 Tbs rum (opt)
3 Tbs sesame oil (opt)
4 Tbs sriracha chilli sauce, plus extra squirt on top
5 Tbs olive oil
Pink Himalayan salt
Black pepper
Chilli flakes, sprinkles on top of eggs

Method

Cook black rice as per packet instructions. Set aside keep warm.

Heat both oil in cast iron on medium heat. Add minced beef, break up stir and cook until brown. Then add eggplant cook until soften a bit. Next add garlic, ginger and onion fry until soften a bit.

Now add oregano, kaffir lime leaves and tomato can. Then add cooked black rice and water stir to mixed well. Add capsicums, Moroccan powder, cardamom, sumac and season with salt and pepper. Cover with lid cook for 5 minutes.

Now remove lid, make 4 indented holes, crack each egg into the hole. Cover lid and let eggs poached for 5-7 minutes. Once cook. Remove lid and sprinkles chilli flakes. Serve straight from cast iron with side of vegetables – microwave cauliflower (opt).

Note: You may make yours extra sauce or with cheese. You may not want to add black rice so just add minced beef. You can omit chilli sauce and add tomato paste. You may omit rum or sesame oil. You can just eat with bread so; you needed more tomato soup/ diced tomato can and more liquid.
