Apple lemon-thyme cake

A friend gave me some of her plum cake to eat. After eating her delicious cake. I started craving for cake. It’s had been a while I had not bake cake. So, today I went to supermarket to buy fresh ingredients.

My friend also gave me her recipe; Jewish type of cake. Which I have recreated it using apple combined with lemon thyme leaves. This is really something about me; love combining fruits with herbs. Next instead of normal round or square baking pan. I opted for a pie dish; being innovative.

My cake is moist, crunchy texture from apple and perfumed flavour with lemon thyme and orange juice. In addition to creation part, glaze with strawberry jam. The verdict by my family: taste not too sweet, has the right balance and delicious. Happy Baking!!!!

Ingredients

2 medium size royal gala apples, cored and cut into wedges
250 g butter
3/4 cup sugar
4 large eggs
1 Tsp vanilla extract
3/4 cup plain flour
1 1/4 cup self-raising flour
1 shake Himalaya Pink salt
1 Tsp baking powder
1/4 c orange juice (bought)
2 small sprigs of lemon-thyme leaves
4 Tbs strawberry jam for glazing top of cake

Method

Preheat oven to 180 degrees C. Butter a 27 cm pie dish and set aside. Then cream butter and sugar until pale and creamy. Next add eggs, one at a time, beating well after each addition. Now, stir in vanilla extract.

Sift both flours, baking powder and salt together. Then mix flour into batter until combined. Add in orange juice and mix again to incorporate together.

Once batter consistency is right: not too runny or too dry; spoon mixture into prepared pie dish. Smooth the top. Give a couple of gentle knock on bench top. Then arrange apples in neat rows and gentle press down a bit. Sprinkle lemon-thyme leaves on top.

Bake for 35 minutes until a skewer inserted in the centre comes out clean. Switch off oven, leave in with door close for 30 minutes. Remove from oven and spread jam over the top while it’s still hot.

Note: You can use any fruits you like. You don’t have to add orange juice or lemon-thyme leaves. Oven temperature may vary. You might need less or more. You may use normal baking tray: round or square small size. I just wanted a different design and trying out using pie dish.

    My husband love bakes with apple. He does not like cakes with creams or icings. This is his kind and I am bookmarking this to try.
