Aperol, guinness, chocolate-mint with cream cheese and strawberies cake

Let’s celebrate Easter Sunday with more boost to your alcohol intake by mixing Aperol and Guiness with mint flavour to finished off  your meal; burping a satisfying feeling in your stomach and fresh mouth.

Here’s my experiment that were successful: Aperol guiness chocolate mint with cream cheese and strawberries cake to bring it alive with strawberries for colour and chocolate sprinkles as extra decoration than a dull Guiness cake look.

Sooooo,  keen to experiment and being creative, I mix it with Aperol and add chocolate mint to make it a satisfying dessert in everyone plate.

Ingredients

380 g brown sugar
250 g unsalted butter
320 g plain flour
80 g dark chocolate mint flavour (70% cocoa, broken into small pieces
300 ml sour cream
1 c Guiness Stout
1 c cocoa powder
1/2 c Aperol
2 large eggs
1 Tbs vanilla extract
2 1/2 Tps baking soda
3/4 Tsp salt

Frosting Ingredients

250 g cream cheese
250 g icing sugar
113 g unsalted butter
180 ml thicken cream

Decorations

8-10 strawberries, stem removed, washed and dry
Chocolates sprinkles

Method

Greased a 9″ round cake pan with 3″ deep with butter and line the bottom with baking paper brushed with some more butter.

Melt butter in a saucepan over medium heat. Then add Aperol and guiness; bring to a simmer. Remove from heat and whisk in the cocoa and chocolate. Set aside to cool for about 12 minutes.

Beat eggs, sour cream, and vanilla in a large bowl to combine. Next add aperol, guiness, cocoa, chocolate mixture to the egg mixture and beat until smooth.

Now add flour, brown sugar, baking soda, and salt. Beat until combined well.

Spoon the batter into the prepared pan. Bake 1hour and 15 minutes until a skewer inserted in the center comes out clean.

Switch off oven and leave cake in with door close for 30 minutes. Remove cake from oven and cool in pan for 1 hour. Then transfer to a foil cake container with a plastic serving plate mat.

To make frosting

Beat butter until light and smooth about 1 minute. Add cream cheese beat until light and smooth about 4 minutes. Next add icing sugar beating until incorporated. Now, add thicken cream beating again until increase in volume about 5 minutes to make spreadable consistency. Decorate with strawberries around the cake and sprinkle some chocolates sprinkles.

Note:Aperol is bitter orange-y taste”. “Guiness Stout on the other hand is a specific kind of brew that people enjoys on every St. Patrick’s Day.

Guiness has a dark, strong-bodied brews because its thick, creamy head caramel and stomach filling grade. Also I were told for its unique, rich, caramelised flavour when added to food. One of the most popular dishes to use Guinness; I know is Irish Stew”.

Do taste batter and you might need to add more sugar. You do need to check the consistency of the batter; if too running add more flour. You might want to frost your cake like the Guiness cake without strawberries and chocolate sprinkles.
