Food from the pantry and fridge. Today, I am experimenting the combination of fruits, yoghurt, and vegetables with Tabasco sauce to make a cake. I know it’s weird combination, I believe no one had the idea like mine.
Well, I don’t like wasting food in time like Quarantine, food is scarce when you cannot go out often. So, I dump everything that is going to expire and see what it turn out. The most important thing is the taste that I am looking for.
As far as I know avocado is a healthy fruit together with mixed berries. Tomatoes is great for eyes health and me being chili lovers needed to add spicy sauce. I have also added onion in as it’s going to be bad. Yes, onion that’s right.
Oh, I have also run out of flour both the plain and self-raising. In goes both the leftovers flour. The mad scientist is busy at work creating a weird, delicious, healthy cake. Let’s bake!!!!
160 g plain flour
160 g self-raising flour
2 tsp baking powder
1 1/2 tsp salt
500 ml yogurt
215 g castor sugar
3 extra-large eggs
1/2 Tsp vanilla essence
1/2 cup olive oil
150 g mixed berries
1 avocado flesh, cut into cubed, and pureed
1/2 onion, peeled
2 Tbs lemon juice
6 bellino tomatoes
a few dash of Tabasco sauce
Preheat the oven to 180 degrees C. Grease the ring pan. Mix together flour, baking powder, and salt into a bowl. Using electric blender, blend together the yogurt, avocado, onion, tomatoes, lemon juice, and Tabasco. Then using cake beater add blended yogurt mixtures beat with 1 cup sugar, eggs, vanilla, and oil.
Slowly blend the dry ingredients ( a ladle at a time) into the wet ingredients. Add mixed berries and fold them very gently into the batter. Pour the batter into the prepared pan and bake for about 60 to 70 minutes, or until a cake tester placed in the center comes out clean.
When the cake is done, allow it to cool in the pan for 10 minutes before flipping out onto a cooling rack. Carefully place on a plate. Cool.
Note Oven temperature vary. You might need to put less time or more time. You can omit Tabasco sauce if you cannot take heat.
You might just want to use only plain flour about 200 g first and add according to the consistency of the batter.
