Quick smoked trout dip based vegetables pizza

Felt like having pizza. Went to supermarket bought readymade pizza base, found smoked trout dip. For a change, use this dip rather than tomato paste. Since my tomatoes are going to expire in 3 days best, I use it. I  also have sliced mushrooms dump it in along with three different colour capsicums, spinach and grated mozzarella cheese.

This is a quick and simple dinner. When you are hungry, it’s great to have the pizza readymade base. As usual I like to create explore the different ingredients and certainly did change the ingredients for the base. It was great flavour using the smoked trout dip on pizza base.

Then fill it with medley cherries tomatoes, mushrooms, capsicums and spinach. This is delicious, comforting, healthy dinner with pulling long the gooey cheese and had to lick the melted cheese on my fingers. Serve it with a cold beer. Let’s get dinner!!!


250 g tub smoked trout dip (bought)
200 g medley cherries tomatoes, cut into bite size
200 g mushrooms sliced
200 g baby spinach, wash dry and roughly chopped
220-250 g grated mozzarella cheese
1 of each colour capsicums, deseed and cut into bite size
1 pizza readymade base (bought)


Preheat oven 210 degrees C. Place pizza base on pizza tray with holes. Spread it with smoked trout dip. Then scatter the vegetables all over the dip. Top with grated mozzarella cheese. Bake for 10-15 minutes or until cheese is melted and golden and base is crisp. Serve with a nice cold beer!!!!
