What is tortilla? Tortilla in google said it “a thin, flat pancake made from maize flour, eaten hot or cold, typically with a savoury filling”. Instead of pizza dough, I use tortilla as thin based pizza.
Tortilla is not Italian bread nor pizza dough. We live in a multi-cultural world. So too our food all comes from all over the world. Yes, we cannot be fussy about what ingredients or methods use to cook our food; as long as we have food on the table and share what we have; we are indeed blessed. Be courageous to explore the combination of food.
My cooking culinary is a growth opportunity to enjoy the varieties of food that I have right in front of me or get it from supermarket. It’s a simple, quick, easy, less time consuming, cost efficiency and delicious with beautiful presentation.
Looking at my pizza. I am seeing the world on the plate. There are ingredients from around the world. They are happy at Peace, loving one another by combining together giving a great flavour that is hearty comfort and a balance of sweet, savoury, and salt-lemony. Crunchy from the vegetables. This is my kind of hearty comfort satisfying meal for one. Enjoy!!!!!!
1 Tortilla piece
Enough fig preserve jam to spread on tortilla
160 grams tenderloin lamb, cut into strips 2 inches
3 Tbsp oil + extra 2 Tbs oil
3 Tbsp sweet chilli sauce
1 Tbsp lemon or lime juice
1 Tbsp oyster sauce (OPT)
2 cloves garlic, crushed
1 Royal gala apple- diced
½ baby fennel, diced
160 g mushroom, sliced thinly
Pizza cheese, bought
1 spring onion to garnish, cut in to small ring (OPT)
Salt and black pepper to taste
Preheat oven 120 deg C. Marinade lamb strips in salt, pepper and a bit half of the oil. Brown the meat in a hot pan in small batches to avoid a build-up of juices in the pan, stirring constantly. Set the browned meat aside in a bowl.
Add a little more oil to the pan and stir fry garlic until fragrant about 1 minutes. Then add fennel and apple, stirring constantly for about 4 minutes. Next add in mushrooms, cook about 1 minute.
When the vegetables are about half done, add the browned meat and stir together with oyster sauce, sweet chili sauce and lemon juice. Remove from hob, set aside with foil for 3-5 minutes to rest the lamb strips.
Once rested, spoon it on top of tortilla which you have spread jam on it and followed by cheese. Next place it in preheated oven to lightly toast it or until cheese melted. Garnish with spring onion to make it colourful.
Note: This recipe is very basic and can be adapted to fit your taste or what you have on hand in the kitchen. Use the same method with different combinations of vegetables and sauces, with or without Tortilla. You can use it with noodles or fried rice.
You can use Parmesan, Cheddar or Mozzarella cheese or any of your choice. You can make your own pizza dough thick or thin. You can use tomato paste instead of jam.
